The Inca and their predecessors created a rich gastronomic tradition. For thousands of years the Andean peoples produced delicious dishes using chilies, corn, avocados, tomatoes, and potatoes. It would only be in the last 400 years that the rest of the world would have access to most of these ingredients. Peru has uniquely mixed its culinary native heritage with that of the Spanish Conquistadors and more recent immigrants such as the Japanese.

I am an Igorot, a Filipino, an earthling. My ethnicity may have made me different, but so does yours and the others out there.
